One of my ovens just broke!!! How long can I keep the cake batter I just made on the counter? It is the white almond sour cream cake so it has egg whites in it? Should I put in refridge? Help!!! Never happened before!!!!! ![]()
Is there a neighbor who would let you bake it right away?
I think it would be ok for a short time (there have been posts where all the pans were prepared with batter at the same time but baked in two batches, and reportedly turned out fine), but any longer than that and the leavening agents (baking powder, soda, cream of tartar, etc) may not be strong enough to get good texture.
Surely there's a neighbor you can bribe with a promise of a cake or cupcakes when your oven is working again! ![]()

EDIT: Just realized you said ONE of your ovens broke - is the other one working? If so, and you just put a cake into the working one, it should be ok to bake one after the other . . .
Thanks! I have a one baking and one ready to go!! The cake needs another 45 minutes in the oven - I hope the batter is ok still. I have never left batter out before. I usually use it all at once and never have to wait - my mama taught me to never let it sit!! I hope this time she is wrong! Of course - i won't tell her!
