Which is better to use when baking cakes, parchment paper, Wilton Quick Release or do you use both?

I just tried something new yesterday and really liked the results. I had been using Crisco's flour spray for my pans but the cakes kept pulling away from the sides of the pans too much. I tried a recipe that I saw here once...you use 1 part crisco, 1 part oil and 1 part flour. I applied it to the sides and the bottom and the cake baked evenly and the cake baked filled all the way to the sides. You might want to give it a try. thumbs_up.gif

what i do is just spray the bottom of pan with pam and put wax paper then spray again and it comes out perfectly....... is that what you do?

parchment paper and flour/pam type spray. In other words both.

I use both, but I make my own pan grease using equal parts flour,Crisco and oil.

I had been using the flour/oil/crisco method but the other day I did a 16 incher and the center did not come out! So now I am doing "Bake Ease" from Krogers and parchment for my big ones.

kaylabrown: I had been using the quick release only, but I think I am going to start using both. The crusts of my cake are getting too hard and I heard that parchment paper would help.

A thin layer of thinned buttercream as a "crumb coat" - the icing kinda seals in the crumbs - you can still see some cake after that coat - it is not pretty would it works wonders!

I love cake release!! If you use the right amount{which is alot} all your cakes will come out perfectly.

Personally, I prefer to use both. I love the quick release spray. I use the spray to keep from destroying my cakes when I turn them out and use the parchment to keep my cakes from getting browned.
