Can't Find Cake Flour - Help

I need cake flour for a cake... a couple of questions,

1. What is cake flour?

2. Can I add anything to regular all purpose flour to make is work the same as cake flour?

3. If I can't what should I do as the receipe calls for cake flour.

Thanks for any help.

"Cake flour is made from a low protein ( 6 - 8%), fine-textured soft wheat so the flour contains a high amount of starch and less gluten resulting in lighter, less dense textures or a more "tender, fine crumb" for various cake and pastry items."

1 cup cake flour substitute 1 cup all purpose MINUS 2 tablespoons, add 2 tablespoons corn starch. sift.

product may still be more dense.

JL,
walmart sells swans Down cake flour it's usually in a box, not a bag. On the top shelf. Do you have a super walmart near you? Most big grocery store chains sell it. The box is red, it doesn't come in a big container either. Good Luck

i found a really neat site called www.recipezaar.com. they have recipes for substitutes such as cake flour, buttermilk, etc. just do a search on cake flour substitute. it even has conversion amounts if you need to adjust your recipes.

If you can't find cake flour in a store near you, try ordering from King Arthur Flour. You can phone them or order online at www.kingarthur.com. They have an amazing variety of flour, grains, sugars, and other ingredients and bakeware and accessories.
