For those of you who have done a wedding cake before..i have a few questions....

First of all let me start by saying what this person wants for a cake.....

A simple cake, for 200.....now...she says 200 people are coming to the wedding...does that mean i need to make more serviings?

also...she wants just a simple tiered cake, with buttercream...but...she is insisting on having silk rose petals on top of the cake....anyone know how long it takes before buttercream bleeds through and looks greasy? or if there is something i could put on top of the cake to keep that from happening?

You could put a round piece of parchment paper directly under the petals.

Or you could put the rose petals on frosting as you are decorating so that they will absorb the grease and the color will be uniform. When I put ribbon on a cake, I spread frosting on the back side so I don't get light and dark splotches.

you don't have to guess at the sevings - she is ordering 200. how many show up or want cake isn't your worry. Don't make any more servings than she is paying for. And why not just place the petals after arriving at the reception? if any "bleeding" occurs it would take quite a long time, I would think. the petals aren't going to be mashed to the cake - I think you'll be fine.

You make as much cake as she pays for, and no more.

As for the petals, I've heard from someone that rubbing some vegetable oil on your ribbon or whatever else (silk petals) will keep them from looking blotchy after touching frosting.
