I am trying to deal with a challenging customer who wants me to make "healthy" desserts. They have to be non-dairy. I figure mostly this leaves out frosting, but I'm sure her husband would like some ocassionally. In terms of frosting this seems to lead to frostings based on silken tofu. Has anyone ever done this? Does it really taste good? Please forgive my non-pc attitude, but it's hard for me to think of tofu as good tasting! icon_redface.gif

Anyway, I'd love to hear some opinions and or book recommendations for recipes.

Thanks,
Kathi

I've never made a frosting from tofu but I use it for fillings all the time. It pretty much soaks up the flavor of what it's paired with. My family loves my chocolate and key lime tofu pies.
