How Far In Advance Do You Start Baking...

If you have a large wedding cake, how far in advance do you start baking? Do you freeze your layers?
When do you make your buttercream?

If you wish to freexe you can bake weeks before. I usually do it the day before let cool, crum coat and stick them in the fridge. Then the next dat do all the real work...deliver that night...

General schedule is bake Thurs, ice and decorate Friday. If I can fit it in the schedule, I will bake ahead, but during busy season when I have weddings/caterings every weekend, there is no time slot open to do "do-ahead" baking. I prefer working with cakes that are partially frozen (easier to handle) so even on events that I can bake/ice/decorate same day, I will put them in the freezer for awhile.

I have a big cake due at the end of July, and I will start baking next weekend, the 7th..........I always freeze my cakes while still warm, I work full time, coach softball, have 4 kids and 3 step children, play Texas Hold'em once a week, sing in the church choir, etc........so for me I have to bake on weekends when I have free time ( icon_confused.gif ) and freeze. I make my bc probably starting the weekend before the event, then take cakes out of freezer on the thursday before and start decoration Thursday evening and finish Friday evening.
