Hello to my extended family! icon_lol.gif

Ok, I'm freakin out a little. I have a wedding cake for tomorrow evening, and the bride tells me at the last minute that she wants raspberry filling. What is a good recipe for one?

She told me she didn't want raspberry mousse, and she doesn't want preserves, either. She wants a homemade one.

I have one recipe, but I've never tried it...so I'm really scared now. I need a tried and true recipe! Can you help me??

I just checked the recipes for fillings here on CC. go to the recipes section under fillings look for "fruit filling" It is a cooked raspberry filling.. its rated 3 stars.

Not mousse, not preserves. On last minute?

Does pudding fall into the mousse category?

Maybe fresh raspberries mashed up a little bit (I'm not sure about the stack-ability of that).

The cake stores around here sell those clear triangular pouches of the jelly-like filling. Not quite preserves, more like jelly doughnut filling but very yummy and really quick!

Raspbery buttercream?

I know you said no preserves.....but I use IMBC mixed w/raspberry preserves and it is one of most requested fillings. it's very good

I have used the store bought filling before (in the plastic pouches) and have never had a complaint. Lately though, I have been using frozen berries (thawed, of course), corn starch & sugar. Dissolve a couple of TB of cornstarch in a bit of water. Add the berries with their juice and some sugar (taste for sweetness). Then stir and bring to a boil. (I wish I could tell you the amounts of ingredients I use, but I just eyeball it depending on the amount of filling I want). When it cools you will have a fresh berry filling that is not too sweet but very homemade!! Make sure you CHARGE her for it!!!!!!!!!

Thank you so much for all the ideas! I think I'm going to go with the frozen berries idea. I bought 4 bags of raspberries and am going to use them all. If I have left over filling, how can I store it? Am I able to put it in the freezer?? How long does it last in the refrigerator?

Can a bride just change her mind LAST MINUTE!!! noooo...i hope u have a contract with her...

b/c if she complains about your filling or if something happens b/c of these last minute plans...then whos fault is it...

Would this work?

Raspberry Jelly

1 12-oz. Frozen, Unsweetened Raspberries
1/3 cup plus 1 tbs. Granulated Sugar
1 1/2 tsp. Unflavored Gelatin
1/4 cup Cold Water

Place the frozen raspberries and sugar in a top of adouble boiler, simmering for about 30-40 minutes, or until the berries are soft and have feleased their juices. Then remove the berries from heat and press them through a fine mesh strainer. All you should have left in the strainer is the raspberry seeds. You will need 1 1/4 cups of raspberry juice so add water, if necessary.

Meanwhile, in a small bowl soften the gelatin in 1/4 cups of water. Let this mixture sit for 5-10 minutes. Meanwhile heat the raspberry juice until hot, stirring constantly. Stir the softened gelatin into the heated raspberry juice until the gelatin particles have completely dissolved. Return the mixture to the heat, if necessary. Let the raspberry jelly cool.

Some brides are out of control and need a reality check icon_eek.gif . She is lucky you didnt tell her to take a hike. Most contracts I've seen prevent last minute changes. And to be so picky-must be homemade! I'm surprised she didn't ask you to go pick the berries yourself.

Thank you sooooo much for all of your input! Thanks for the recipes. I just made a batch of the filling, and it tastes pretty good. Not as thick as I would have liked, but thick enough. I made it before I saw the Raspberry jelly idea. Thanks!! I'll have to try that next time!

She's a good friend of mine, so I let her add the filling. If it were anyone else, I probably wouldn't have done it. I just put the crumb coat on, and am getting ready to start making the rest of the frosting, so I'll be sure to post a picture of it. It's going to have fresh Gerbera daisies on it.

The cake was a hit! Everyone like the raspberry filling, thanks again!

The night was perfect, with only one exception. The bride seemed annoyed that the pieces were so small. Does anyone ever get comments like this? I had explained to her several weeks ago that wedding cake slices are smaller than birthday cake slices. One inch by two inches, per Wilton. She wanted me to cut big chunks for people. It's a darn good thing that several people had left by the time we cut the cake, otherwise there wouldn't have been enough. It seems like making cakes for friends can sometimes be harder than making them for strangers. icon_smile.gif Oh well. Onto the next order!

I get an error when trying to attach a pic, so the cake is in my photos. It's the cake covered in Gerbera daisies.
