I'm not 100% sure about this, but I wouldn't keep it for more than 2-3 days just like any other leftover.
You could roll it into logs and freeze almost forever though.
I don't know what this does to any leavening ingredients though, maybe someone else knows for sure.
What type of dough is it?
I think 2 days in the fridge would be the longest I'd try it, but like the previous poster said, you can freeze it for a long time.
I use the no-fail cookie recipe for my cutout cookies, and I roll it out between sheets of parchment paper, then freeze in one of those new jumbo ziploc bags. When I want to make a few cookies, I just take a "sheet" of dough out of the freezer, let it thaw on the counter for a few minutes, and it's ready to cut and bake!

I have some choclate chunk in my frezzer (premade the kind schools sell) it says-- are you ready for this---freeze up to one year or refrigerate up to 6 months.
I looked at the ingredients and there are no preservative type things listed just basic stuff like flour, eggs, sugar etc..
