Never Done This Before....

Can any of you help me??? My god daughter has just announced her pregnancy (3 months along... by a very bad person... {someone that abused her youngest daughter already} and wasn't a good announcement) anyway she tells me tonight when I called to talk with her mother that her birthday is coming up (7-11) and she would like me to make her a Pineapple Upside Down cake that she's craving it something awful!!! lol.... I've NEVER done one of these before and I'm scared lol. I don't know where to start and I don't know what to do...

I told her I would check with my cake friends and find out what would be a good size, shape, and everything else... and find out some prices for her. She doesn't need alot of cake because I don't think everyone in the house likes it lol but below are the pans I have....

9x13 sheet
11x15 sheet
12x18 sheet
8x8 square
4 piece round set (6", 8", 10", 14" I think)
Bundt pan

Those are the only ones I have that would do for this type of cake I think...

I also have the large book pan, and horse shoe pans... and teddy bears and other shapes lol but traditionally isn't this done in a sheet type pan??

Also what would you charge for this cake??

This is just for her birthday we aren't celebrating her pregnancy right now, no one is happy about this but her and him. Her mother isn't happy AT ALL! and is still trying to deal with the whole thing... things aren't very good right now in their house so I don't even know if she'll be living there come time for her birthday... but... I want to be able to fullfill her order/request and like she said "It'll be a great picture for your portfolio and your website!" as I don't have one yet lol

Anyway any help tips advice warnings etc would be greatly appreciated!!! I need to get back with her in the next week on a size and price list... I told her I'd get her a few prices and sizes to choose from so she can pick which would be good for her... TIA!!!

There are a bunch of recipes on allrecipes.com . It's been years since I've made or had a pineapple upside down cake, but they're very tasty. They are not to be decorated, though. It's more akin to a dump cake or a cobbler than a normal cake. And it's best served warm, right out of the oven.

What would I charge? For a non-decorated, super easy, good ol' home-cookin cake? For my goddaughter? Who is going through a tough time and is pregnant and craving the treat and having her birthday on top of it all? Not a chance in hell I'd charge her a cent.

Okay, I make this one all the time. It's a family favorite. But I use a box....

Melt a 1 1/2 sticks of butter and pour it in the bottom of a 9x13 pan. Add enough brown sugar to absorb the butter, but the sugar is still wet. (Wish I had exact amounts, sorry.) Then on top of that you can either put crushed pineapple or I like to use the sliced ones and put cherries in the middle. Then I use one butter yellow cake mix and use the juice drained from the pineapple plus enough water to get your needed liquid for the mix. Mix well and Pour that over the top and bake. Then when it's done and piping hot, turn it out. And resist the urge to cut into it immediately and burn your mouth. I have done this once in two rounds and stacked them, but it's just as good in a sheet. As far as price, not sure. It really isn't that expensive or hard to make. I'd probably only charge my ingredients doubled.

Thanks girls! You guys are great! I thought about not charging her anything but her mother would lay into me so badly if I didn't. One of those "It's your business it's your livelyhood Becky it helps with food and bills and gas and stuff take the damn money" lol.... So I was thinking maybe something small like a 9x13 made from a mix... I don't do scratch cause they have no flavor (please don't kill me icon_sad.gif) but I do have a few my grandmom passed down that were excellent!! She NEVER used box mix lmao but made the best darn cakes! Anyway... she wants it like her pop-pop makes it and I know he ain't no scratch man lol.... But I figured I'd only charge her maybe $25.~ just to cover the cost of the ingredients, the boards, the box, and delivery fees since gas prices are so darn high right now and they are 20 minutes away (on a good day lol)

Also she likes it cold... so I don't have to worry about the "serve warm" note I've seen on every recipe lol. Thanks so much for your help and advice on this...

My family is strange, we like it cold. Like sara I use the yellow box mix, but I use both crushed and sliced pineapple.

And if anyone, family included, asked me to make a cake for them for whatever the reason and whatever the circumstances....there's no way on God's green earth I'd do it for free.

If I offer to make a cake, that's one thing, but if someone requests a cake from me, they will be charged. I *might* give them a discount, but they WILL pay something for it. They wouldn't get it for free from Wal-mart, so why should I work for free?

I agree, it's bad enough my mother doesn't feel she has to pay me for the cakes she orders and they are always more then just a small cake... (the wrestling ring cake and white funeral cake) very time consuming and labor intensive and didn't get crap for it not even a thank you lol...

Here is a great one. It sounds like Sarahnicoles but here are measurments
The recipe calls for a large non stick oven prrof skillet (12 inches)
(you can probably make it in a pan just grease it well.

1/2 cup butter or margarine
1 cup packed brown sugar
1 can (20oz) pineapple sliced with juice
5 maraschino cherries drained and halved
1/2 cup nuts (i leave them out)
1 package (18.25) yellow cake miz
water
1/3 cup veg oil
3 eggs

Preheat oven to 350. melt butter in pan over low heat
Remove form heat and stir in brown sugar. Drain pineapple into measuring cup. Add enough water to juice to make 1 1/3 cup liquid. Arange pinapple over sugar mixture and place a cherry half in each pineapple. combine cake mix with liquid, eggs and oil mix until smooth pour over fruit. Bake in oven for 30-35, or until tested done. let stand for 5 min. loosen edges and flip on to large sserving plate.

I LOVE pineapple upside down cake - but I make mine the old fashioned way - in an iron skillet and made from scratch. I really like it cold better than warm, too. I use a great southern living recipe. I'll try to find it if you want. I think it sounds like the one posted above might be what you are looking for. As far as pricing - I agree that covering your costs (gas included) sounds reasonable for this situation. I charge $20 for mine here at the shop.

And best of wishes for your Goddaughter. I hope the family situation will work itself out.

It's totally fine to decide to charge friends and family, don't get me wrong. That's a reasonable decision. But...

Because you're not wal-mart, and the person in question isn't an anonymous customer among billions. Because you love the person. Because you want to do something nice for them. Because they're going through an incredibly tough time and you can do something small to help. There are plenty of reasons not to charge. She asked what we would charge, and I told her what I would charge in these circumstances. Reasonable people can come to different conclusions.

If anyone wants to know what to charge for any baked good, I suggest he or she learns how to do a cost card analysis and build in a consistant percentage of profit. That's the best way to know you're not undercharging (or overcharging--but that's really not a risk for most of us icon_wink.gif ).

i usually use the box mix for my pineapple upside down cake too. but i can't leave any cake undecorated in my house so i usually whip up a batch of buttercream and use the juice from the pineapple to flavor and thin it instead of milk and vanilla. it also give it a nice off yellow color. then i usually do a border on top and around the base and a couple of small roses in the center.

p.s. i probably wouldn't charge her either.

I use all cast iron too and I've been wanting to make this cake for awhile. I'd love to have your recipe for it if you wouldn't mind sharing! TIA icon_biggrin.gif
