Here are instructions from Wilton on how to make ribbon roses:

The roses look better if the strip is folded before rolling to form the rose. The folded edge will be the top edge of the flower.

Thanks for the tip on folding the fondant over Miriel.
It looks soo much better. After reading this I had a go with some left over fondant. I've only ever done the rolled and not flared before so thanks.
