Immediate Help Needed: Smoothing White Bc

Okay - I have tried many methods - warm spatula, smooth papertowel - today nothing is working. Any other ideas?

I need a smooth surface for wedding cake - I know there are some other secrets out there - let me hear em!!!

Bench scraper of even a wide putty knife works great for me... I've since stopped using the Viva method. Frost the top like usual makeing a lip over the edge of the cake, ice the sides fairly smooth, use the bench scraper and a revolving cake stand to smooth the sides. Put the bench scraper against the side of the cake and turn away with the other holding the scraper hand still as you can. If you don't have a revolving cake stand, just hold the cake in your hand or on the counter top and do the same thing, turn with one hand and scrape with the other.

Try dipping the spatula in water that was boiled. Shake off excess & then smooth.

yes i agree on the bench scraper.... but i use a metel cake smoother that i bought at sur la table.. i own 4 of them.. lol icon_smile.gif

I use the viva paper towel and smooth it with a fondant smoother, works great so far...

In a pinch I have tried using wax paper on a crusting buttercream with a putty knife ( icon_redface.gif I have even used pieces of straight cardboard before I bought the putty knives.)

Hope someone has an idea that may help!

My instructor said the best way to smooth BC icing, is to allow it to rest for 15-20 minutes, and when you can place your finger on it and it doesn't leave big indent, that it's ready to be smoothed.
She used a piece of parchment paper, and just lightly smoothed it that way.
