I normally don't freeze my cakes. I put them in the fridge wrapped well in Saran wrap. Sorry maybe someone else may know. I know alot of people freeze them.

I usually put mine in the freezer for 20-30 mins before icing to cut down on the crumbs. It helps a lot, especially with chocolate cakes, which tend to crumb the worst.

Hey, I'm a newbie too!! In my Wilton I class, we were taught to wrap the cake well in Saran wrap, freeze our cakes for 24 hours and then let if defrost for at least 2 hours before you ice the cake!! Hope this helps!!! icon_biggrin.gif

If i have the time, I prefer to freeze my cakes for about 48 hours or so, longer won't hurt. This just seems to lock in the moisture better, my cakes are always really moist. Wrap really well and take it out the day you want to frost. Unwrap it and let sit on the counter. I find it is easier to frost a really cold cake, maybe even a little bit still frozen.
