Non-Refrigerated Fillings

Hi There--

I'm looking for filling recipes that don't require refrigeration. I have a regular size fridge, and don't like to store my cakes in it. Right now, they're just for class and the leftovers come to work. I've filled with jam/jelly and store-bought icing, but I'm looking for something with more "WOW" factor.

You could just flavor your BC and use that for filling. Sorry, but I don't get a lot of requests for filling other than fruit.

im not sre if you can buy the sleeve fillings anywhere near where you are but thats what i use when im not putting my cakes in the refrigerator

I thought once you opened the package it had to be refrigerated?

Ganache doesn't need refridgeration, and it totally yummy. If you flavor with Jam, it should be fine at room temp for a few days. Also, flavor with creamer. You can do any flavor.

i put the leftovers in the fridge but i don put the cake in usually unless its really hot

I use these and do not refrigerate cakes filled with them but refrigerate leftover pasty filling sleeves.

Ganache is my favorite non-ref filling. It's made with cream, but once mixed with the chocolate it is fine to be out of the fridge. Also, citrus curds can stay out, depending on the recipe - the high acid level acts as a preservative.

Oh man I am so glad I popped in on this thread. I LOVE ganache but never make it because I thought it needed refrigerated. Now I gott go buy some cream icon_biggrin.gif

I'm glad I read this one too, I didn't know I could leave out ganache, curd or sleeve fillings. I have 2 1/2 sheets I have to do this weekend, and I have to fill one with pineapple. Now I don't have to put that big cake in the fridge.
