Help!! - Problems With Chocolate Buttercream Frosting

I'm doing my first "professional" cake and I decided to make my own buttercream for it. (I suppose it's a sacrilige to admit it here, but I've always used canned.) Anyway, I made the "Easy Chocolate Buttercream" recipe I found on here, and it's SO STIFF I can hardly spread it!! Is this normal? I've added additional milk and it doesn't seem to help much. I'm trying to fill a 12" round, and it's pulling the cake apart as I try to spread it! I've already used about 2 cups just trying to cover the cake for the filling. HELP!! Is this normal with this stuff? What do I do?

You need to add even more milk to thin it down. Just keep adding 1 TBS at a time until it gets to the consistency you want. The cocoa in it will dry it out.

Next time try the chocolate buttercream dream recipe. It was soooo good and had a great consistency.

yep, I would say more milk till its the way ya want it.....

I think choc. buttercream is so tricky! I tried using cocoa powder and it made little clumps all throughout my buttercream and gave it a grainy texture. Then I came here and tried the recipe w/ Hershey's syrup and that turned out pretty yummy! Try using that recipe maybe......

I use the cocoa in my buttercream when I want chocolate but I sift the cocoa, that helps alot with the clumps and graininess. I'm going to have to try the one with the Hershey's syrup.

Okay - MAJOR DUH!!! Just wanted to report back that I discovered what the problem was. I doubled the recipe and doubled everything but the milk!! So when I'd added additional milk, I hadn't even added the amount the recipe called for. I did have to add quite a bit more than the recipe called for by the time it was said and done, but, boy, did I feel like an idiot when I realized the problem. icon_redface.gif Thanks everyone for your tips, though!
