Sinking Cakes ???

Ok, lately when I've been making my cakes they've been sinking in the middle. What the heck is causing this???

I had the same problem last week with my Duncan Hines french vanilla mix. I had used coffee creamer liquid in place of part of the water and I had a huge sink hole in the middle.

If you haven't been doing anything differently, I'd check the temperature of your oven. It might be off.

Excess sugar, fat, or leavening will cause a cake to sink.

The creamer has a lot of sugar in it, and the ID (Int'l Delight) White Chocolate Raspberry flavor in particular, seems to cause sinking.

So if you've made this particular recipe before with success, and the only change was the addition/substitution of the creamer - that's the culprit.

I'd say the temperature of the oven is off or your time needs to be increased. Mine sink when they are not thoroughly done. They look OK when you take them out, but they fall as they cool. Try checking with the toothpick method for a while until you get your time and temp set.

scratch or box mix? a new recipe? i was having problems with a particular chocolate cake recipe that was hailed as the most amazing choc cake by margaret braun and kate sullivan. after several attempts, it was frustrating. they seemed to rise well and then half way through baking, theyd start to sink in the middle. i was baking other recipes at this time with no problem. i checked all the possibilities, oven temp, loud slams while baking, signs of too much sugar or fats in the finished cake etc. FINALLY i pulled out the good ole JOY OF COOKING cookbook and read about ingredients and what makes them work or not work. i figured out that it was the leavening agents (powder/soda/ combined with buttermilk). the recipe was developed at a higher altitude and was calling for a tb each of powder and soda along w/ the buttermilk (acid) and chocolate (acid). i am at sea level, so the appropiate measurements for me were to put 1/2 tsp per cup of flour instead of what the recipe called for. i did this recipe again last week for the fifth time with the adjusted amounts, and it rose...and did NOT sink!

I've read a lot of posts lately saying Duncan Hines mixes are doing that, so maybe it isn't anything you did, but the mix itself. Maybe they changed their recipe.

Try another brand and see how it does. If it still sinks, then it probably is the added ingredients.
