I'm going to be making a variety of cupcakes for a big potluck dinner this Saturday. I want to just use up what I already have in my fridge.
So I figure I will add a bit of mint extract, green food coloring, and mini chocolate chips to my buttercream and fill this in chocolate cupcakes.
Now, for the frosting on top...I have some left over ganache. Should I just use it alone or mix it into something else? Seems like cupcakes should have a bit of height on top, but I don't know what to...mix it into regular buttercream?
I would mix it into a whipped frosting or just regular whipped cream. I use Wilton's whipped ganache recipe all the time and love it.
