Well I have had someone contact me and want me to do a cake like one they saw on the Cakes by Sam website.

It is the Birthday Spa Cake. They only want around 30 small servings she says and I need to know what size of cakes to make and how much would you charge for something like this? This is someone I don't know, normally my orders are from people I know well! Any help or suggestions since I have never made a bow or letter would be appreciated! TIA
I would say a 9" and a 6" round would give you enough servings if she wants wedding sized (1x2x4"). If she wants larger servings (2x2x4) you would need to make larger.

As far as letters go there are many ways to make them. They can be made from chocolate, fondant, gumpaste or Royal Icing. I made something similar for my Grandma's 80th but it was numbers. I used Royal icing for that one. I haven't done Chocolate personally but have heard of people doing it by piping and by molding. With gumpaste just or fondant and gumpaste mixed together Roll a long snake of it and then shape into the letter/s required. Attach ends with a little water and let dry. I usually use toothpicks for supports of my letters.

seeing how you're gonna do a two layer w/ all those fondant or gp decos i'd say $50-60 or so. depends on what you'd feel is justifialbe compensation for your time (ie what's your time and creativity worth).
If you ice it in buttercream and do fondant decorations I would suggest $3 per serving, no less than $2.75.
Figure out how much your materials are going to cost you plus your labor (the hours it takes you to complete).
