I usually don't make and decorate my cakes until 'the-day-of' (just kid's birthdays. I don't sell cakes) but this time I need to have the-day-of totally free. How far in advance can I make the cakes? I don't want them going soft or stale. icon_biggrin.gif Thanks!

I usually bake 4 days in advance. I freeze my cakes and put them in the fridge the day before I decorate. HTH.
