Making Petal Paste

I'm currently trying to make my own petal paste, does anyone know how much powdered albumen I should use instead of one large fresh egg white? Fresh egg whites seam to make it too sticky!

I use powdered egg white (reconstituted with water) for my IMBC, because it's pasteurised and therefore safe. 4g of powdered egg white and 30ml / 1 fl. oz water is equivalent to one medium fresh egg white (from directions on packet). The IMBC recipe I use calls for 5 large egg whites, not medium, but I find that 6 medium powdered egg whites works for my recipe.

thanks for the advice, i will give it a go. what is the imbc recipe if you don't mind me asking? the only reason i'm asking is, would the added water still make it as wet as the freash egg?I'm trying the iss one

IMBC is Italian Meringue Buttercream and yes, the added water makes the powder just like a fresh egg white (though not as 'gloopy'!).
Sorry, I wasn't clear, it has nothing to do with petal paste, but you should try it anyway, it is really delicious (I use ShirleyW's recipe from here on CC).

You could always try just using the egg white powder in your recipe and only add water as needed, if it is too dry.

thanks, i will give is a go it sounds nice. i might try a teaspoon full in my recipe and like you said add water if i need to. i won't learn unless i try will i icon_biggrin.gif .
