Cutting A Road Into A Cake?

How do you cut road ramps into the side of a round cake? Can I do it with the cake just chilled from the fridge or should I freeze it? I never freeze my cakes and I was wondering if it changed the flavor? I am making a Cars cake for my son and I planned on having a two layer ten inch and a two layer eight inch. I was wanting to have the road cut through the cake like in this cake by bjfranco. I would appreciate any suggestions. Thanks

Wow! What a cool idea icon_eek.gif My son would love a cake like that! I am timid when it comes to carving so I don't know the particulars but I'm sure someone will come along.....

it looks as if these were rounds and then cut from the side to form the ramps i can't descibe it but i can see it
