Need Help Now...wahhh! When Do I Freeze The Cakes...?

I've just finished baking some cakes (durable recipe for 3-d cake) and am getting ready to wrap them in saran as they've been out of the oven for about fifteen minutes. Do I just put them directly into the freezer; they are still quite warm. I plan on going to bed in a little while and then when I get up in the morning, I plan on carving and shaping a train cake. I've never done the freezing thing. I know all of this has probably been hashed over but I need answers quick and can't find the info. I need. Can you help me???? TIA

I let mine totally cool before I wrap them and put them in the freezer. I do know that some people go ahead and wrap their's right after baking.

I throw mine in the freezer as soon as I wrap them. But my freezer is for cakes only. If you have other things in your freezer (food items) it is recommended you let the cake cool first as the heat from the cake lowers the temp in freezer and may mess with the quality of what is already in there and may allow some kinds of bacterias to grow. I read that somewhere.

Thanks you guys! So I've already wrapped them and they are still warm. I guess I'll wait for the temp to come down a little more before I freeze? What do you think? TIA icon_smile.gif

i'd unwrap them and let them cool completely, then re wrap in 3 or so layers of tight plastic wrap, then freeze or even just refrigerate. carving a frozen cake can be dangerous. that durable recipe sets up really well just chilled in the fridge also. i used to use that for carving last year (converted to scratch now icon_smile.gif ...)

I wrap mine after I cool about 10 minutes out of the pan.........still quite warm. Saran wrap about 3 times over, then aluminum foil, then into a garbage or grocery bag, then into the freezer to lay flat........never had a problem..........do this with all my big cakes.

Thanks to all of you for your responses! I wrapped them last night and put them in the fridge. I started doing my train this morning and decided to put one of the small cakes in the freezer for a bit as I need it to stand somewhat. I finished the cake. I'm going to put it in the gallery. Thanks again for all your help, everybody thumbs_up.gif
