When you are buying cake pans how deep do you want them? I have seen ones that are 3" deep and 2". What is the prefered size or what works best? icon_confused.gif

I usually buy 2in, but then I'm not so much a pro. I've never seen a need for 3".

I asked this same question several weeks ago and the answers made perfect sense. With the 3" deep pans, you can either make a 2" or a 3" inch cake...multi-purpose. However, if you have a 2" deep pan, that is all you are going to be able to make unless you collar your pans. Make sense? After asking this question, I ended up buying several new Magic Line 3" deep pans and am very happy... I love them!

The deeper pans are very useful if your going to make fruit cakes as you only do these in one layer, otherwise I think 2in pans are just fine for normal 2in layers!

The only 3" pans I have are my round pans. Everything else is 2" pans, but I do like the idea that I can make any height I want on the 3" pans without having to mess with collaring (i've never attempted that). It's just a preference.
