I have too much batter for my pan and have to make another batch after this one cooks. How do I keep the leftover batter so I can use it in the next cake? Just cover it? Fridge?

Thanks!!

Just put it in the pan and let it sit (in the fridge or on the counter). Doesn't affect it at all.

I usually just put the leftover batter in a tupperwear container and put it in the fridge until I need it. If you're going to use it within a short amount of time, just keep it covered to reserve the freshness.

LOL, this is just a side note for those of you who have husbands like I do:

Make sure you put a note on it stating it is cake BATTER. I put leftover chocolate batter in the fridge the other day and when I got home from work it was gone. I asked my husband what happened to it and he said he ate the chocolate "icing". icon_rolleyes.gif LOL Good thing there wasn't a lot of it left over.

You can cover it and leave it in the fridge.... even up to 1 day icon_smile.gif I've had to do that before too!
