I'm looking to make a chocolate cake from the Cake Mix Doctor, but both recipes I'm looking at say to store the cake in the refridgerator. I'm not sure if it is for the actual cake, the filling or the icing. I'm just interested in the actual cake part since I'm going to ice with my regular BC. The "Perfect Chocolate Cake" recipe has sour cream in it (all other ingredients are normal for cake mix) and the "Buttermilk Devil's Food Cake" obviously has buttermilk in it. Could either of these cakes be stored out of the refridgerator for 2-3 days?

They should be fine out of the refrigerator as long as you don't use a filling or icing that needs refrigeration.

If you are going to leave it out for 2- 3 days, make sure you seal it well with the BC. I would put on one thin coat and one regular. I would also put it in a box, so that no dust or other things get on it..
