Can I Start Making Mmf Today For Saturday Cake?

I plan on baking the cakes tomorrow, but was wondering if I could get a jump start on my MMF -- I wanted to make it and get it colored today (Wed). Is that too far in advance? Will it dry out?

Absolutely you can make it today; as a matter of fact it is best when you make it ahead of time. Just make you that you double or even trip plastic wrap it and give it a coating of shortening before wrapping it. You can even restore any left over for another 3 months in a cool dry area.

I take a couple extra sets when storing MMF here, cause we get humid here lol=) I do just as the pp stated, then place the suran wrapped MMF into a zip-loc bag that I removed the air from. Then I place that in a tupperware container and store it in my basement due to it being cooler and not having to worry about light changing colors=) Jen

I do the same newbebaker! How funny! YOu just have to remember that there is a lot of grease and preservatives in store bought fondant, so it is less likely to ry out like MMF can.

I always make mine ahead of time, it works better done this way! I cover it in shortening, double wrap it in saran, then in a ziploc bag. I put mine in the fridge - is this necessary? Also, it is good for 3 months? That would be great news for me, I usually try to use mine within a couple weeks, so if I can make lots and keep for that long - yahhh icon_cool.gif
