How high should a sheet cake be? I'm baking a 12/18/2.

I think this is a matter of personal preference. I prefer mine to be tall, 2 layers with filling (at least 3"). I've read several posts here where decorators leave their cakes at about 2". Whatever works for you!

The one thing about this industry is there are no hard and fast rules. There are "traditions" and there are "it's usually......", but pretty much it's "each to his own" as far as what you want to create and what your customers prefer.

I make mine 2 in high, but I make sure there is enough batter to rise over the top a little so that my sides are a full 2 inches.
