"wedding Cakes You Can Make..." By Dede Wilson

I love her recipes. I make her Italian Meringue Buttercream and it´s to die for. Her cakes are more traditionally decorated (no fondant, gumpaste flowers...) but they look very classy and the recipes sound mouthwatering. I´ve tried the apple cheesecake and it´s really good. Her white and chocolate cake recipes are good too but I think they´re a bit on the dry side so using simple syrup is a must. I read somewhere that her carrot cake recipe is very good too. She gives tons of information on how to set up wedding cakes, talks about servings, how to achieve even baking... I don´t own the book but has gotten it a few times from the local library and I think it would be a good investment.

I am borrowing this from my library right now!
If I'm thinking of the right book, it has a GREAT section of charts in the beginning for serving sizes. And it breaks the recipes down by common pan sizes. So you have a recipe for White Cake in 6", 9", 12" sizes.
I made the white cake recipe and it was really easy to handle. I think I overcooked it a little though so it was a bit dry, I think that's my fault.
I keep renewing it because I don't want to take it back yet.
i love this book. i use it all the time and i just love the ideas she has. the recipies are very easy as well. i found that the yellow cake recipie in the book tastes more like pound cake than anything though. that is my only complaint.
I am completely addicted to this book..... it's like my little bible. I think the reason I love it so much is her cakes are very much something you CAN do... she doesn't do fondant - I think she has a funny little thing in the book about how it doesn't taste good so that's why you won't see any cakes with it.
I think her designs have a very classy but simple elegance that is so pretty. I have been wanting to try her IMBC but have not since I am afraid of messing it up... I have to get over it since the Wilton stuff is gritty and sort of yucky.
I haven't gotten to try anything yet but I've gotten it from the library twice! (Isn't it sad I've done nothing w/ it either time??? )
Anyway - it looks good and some of them sound soooooo yummy! So are some of you saying that they turn out dry? Do you think that's her recipes or something else you're doing? I always have trouble baking from scratch, but I really wanted to try some of her recipes....... don't want to give anyone dry cake though!
I have the book as well and after reading how dry her cake recipes were I haven't tried them but I do use her IMB recipe. The pictures are beautiful and inspirational. The books I do recommend are the Whimsical Bake House (the recipes are wonderful!) and I just recieved the Cake Bible which is full of information on cakes.

CakeDiva73--I haven't done IMBC either, same here with fear of screwing it up. I may jump in with both feet and try it. I have made the WBH house buttercream in chocolate and it is very yummy!!
Jacqui--I have WBH and the Cake Bible, plus The Well Decorated Cake by Toba Garrett. I love them all.
Imartsy---I will have the check out the recipes, but I hate a dry cake. I want it mainly for the good info on making wedding cakes. I am a buttercream decorator so this should be helpful.
OMG...I first got it from the library at school. They wanted it back...LOL.So I went and bought it. It brakes cake decorating down and makes it seem possible for even the beginner. I tried the chocolate cake recipe , it was a bit dry and heavy. But tasty. Love the book!!
This is one of my cake library staples!! I love Dede Wilson's cake books. Both her wedding cake books are fabulous!! She has wonderful cakes, recipes, and her instructions are detailed and well thought out. I recommend her books every chance I get.
One of the things I like the most about it, is her cakes are beautiful, but simple - they LOOK edible. Fancy cakes are fun, but don't often make your mouth water just by looking at them. Theses are the kind that your eye and your tastebuds are attracted to.
You'll love it!
I just checked it out from our library as well! Are we all really THAT addicted? I think so.....
Haven't cracked the cover of it yet, but now that kids are off to school, guess what I'll be doing? ![]()
If anyone decides to get a copy, it's cheaper at overstock.com than Amazon.com - and they usually have much better shipping. Right now it's $1 for shipping I think. ![]()

I have been afraid to add flavors to the House Buttercream in WBH. I don't know enough to experiment, and in the book they only tell you how to flavor Kaye's Buttercream. Do you flavor the House Buttercream the same way they recommed flavoring Kaye's?

Overstock.com also has Colette Peters books for between $18 and $23, and their shipping is low anyway, I think $2.99 is the usual shipping charge!
I have a question for those of you who say her recipes are dry - are you used to making/eating cakes from a mix or are you pure scratch bakers? Thanks!
I ordered the book from Amazon as well. I have tried some of the recipes out of the book and all but one was a disaster. The worst was the Valentines Day cake pg 131. I did it exactly like in the book with the filling, syrup etc. It was NASTY. My dh hated it especially the filling. I think it was the crème de cacao that ruined everything. The only one that did work out was the lemon blackberry cake. It wasnt great but it wasnt bad either. I used the same idea but with a recipe from my Better Homes and Gardens cookbook and it was awesome.
I let a couple I did a consult with look through the book and they said the cakes were ugly. I dont find them very attractive either. I also took the book to my Wilton wedding cake class and got the same response from most everyone there. Its full of helpful info though, like cutting guides, when to start prep work, how to get organized etc. Id buy it for that but certainly not for the recipes or design ideas.
