Hi - I made the chocolate covered oreos using the Wilton melts. They look great, taste terrific, but once they are out of the fridge for several minutes the chocolate gets really gooey...

Should I be using something else. I looked up on a site that Merkens has a 'confectionary coating (?)' that holds up in humidity better. Not sure if this is what my issue is as its not all that humid/hot here.

Merckens tastes way better than Wilton. I can't compare which one holds up better with humidity but as a general rule, I keep molded chocolate in airconditioned rooms and have not had any problems with them getting gooey on their own.

Huh!??? That's never happened to me before.... did you mix the melts with anything alse??

Thanks for the info on Merkins.

I did not add anything to the Wilton melts except a small drop of Loranns coffee flavored oil. The cookies were in the house and the airconditioning set at 69F. Hmmm...maybe just a bad batch? Or can the melts be overheated in the melting process and cause sometype of breakdown?

That's happened to me, but I don't have AC in the house. I had to put mine back in the fridge. And they weren't so much gooey, just really soft.

Almond bark (candy coating) holds up better out of the fridge....that's what I always use when I cover anything, even cake balls. Sometimes if it's too thick to dip, I add a little shortening to make it thinner. It still sets up just fine.
I have used candy melts before, but I have not had them get "gooey" unless it's very hot or humid.
Look on the bright side! Melted chocolate is very easy to clean up.............just lick it! icon_smile.gif

Staceface81 - thanks for the information. I did a google on almond bark and couldn't get alot of information. Is there a specific brand you use? good point on the clean-up - about the only item in the house I can get anyone to clean!

The kind I buy comes from Walmart. It's called Plymouth Pantry....you can buy it in white or chocolate. It's pretty cheap too. It comes in 1 1/2 pound packages.
Be careful though, sometimes when you add coloring to the chocolate it will seize up and you'll have to add a bit of shortening to it. icon_smile.gif

I use candy coloring which is oil based and have not had any problems with seizing icon_smile.gif

I get mine at a local cake decorating store. Michael's and Jo-ann's should also have the Wilton candy colors.
