Just thought it would be fun to start a thread with this topic.....

my most memorable "aha!" moment is when I first baked a cake with a shiny aluminum cake pan. I had been using dark nonstick pans for a long time and always wondered why my cakes never came out quite right. icon_smile.gif

Fun topic - My "aha!" came when I tried parchment bags. Never will I go back to the disposable plastic with couplers! Parchment doens't slip out of my hands and clean up is SO much easier. And I was afraid to try them for the longest time.

I'm looking forward to more "aha" moments as I learn and try new techniques...

The only one I can think of right now was being the Wilton class #1 and the instructor whipped out a bag with an icing tip and iced a cake in about 30 seconds - big AHA! from me!
