I was just wondering - Do I cover the cake in fondant before I stack it? Or the other way around? I've stacked BC cakes before but not fondant ones. And do I need some sort of plate inbetween. It's only a two tier cake. A 10" and 6" round.

cover and stack -- just like BC

and yes, plates and dowels (or some other type of internal support)

I find it best to cover then stack. I would use a plate (easier cutting and stability). If using a filling be sure to use supports in lower.

Same technique for BC on fondant cakes - cover then stack. Be sure to use enough supports if stacking them.

Thanks for the info. That's how I thought it was done but I just wanted to be sure. I had read some article - don't recall where- but it said to stack it first then cover and decorate from top to bottom. I figured you would have to be absolutely awesome at covering with fondant that way in order to not dent it. And how would you do the bottom? Cut a hole and slide it over the top? icon_surprised.gif I'm glad I asked. Could you picture that?
