Do you do one 2" layer and torte it to create the cake or do you make two 2" cakes and fill inbetween? Just curious what most prefer to do. icon_smile.gif

I fill between two 2" layers. I like nice and tall cakes. I think a 2" torted would be kinda short for my taste.

I make a 2" layer and torte unless the customer requests 2 2" layers.

yes...which ever customer (or my tummy) wants.

two layers with filling AND torting make a cake that when sliced is reminiscent of those humongous cakes you get in a diner.

one layer...not torted....just iced/decorated. Never had a request for otherwise.

I ask if the customer wants a filling. On teh last cake I did, I suggested a cookies n cream filling or said I could do whatever (close friend - wouldn't just offer "whatever" to anyone if I was more set-up and professional) and she said she didn't want to bother w/ the filling. it certainly was easier to not do one!

I've also torted one layer of sheetcake and put filling in it and it turned out fine - use a huge flat cookie sheet to lift the layer off though - great tip!

I think the 4 in. tall sheetcake might be too much cake for some people - and I think it doubles your servings - so it depends on what the customer wants.

i usually just decorate the sheet cake. i recently torted on sheet cake. if i didnt they would have had a humungus (spelling) cake.

whatever the customer wants, but 2 cakes on top of each other costs 2x as much as 1 cake torted and filled.

I bake 2 cakes & place buttercream or filling in between.
