Does anyone have a good recipe for a weeding cake that uses imitation vanilla, soy milk, fake butter and no nuts. My friend is getting married and is highly allergic to pure vanilla, real butter and dairy. The woman she is looking to use for making her cake is asking for a recipe(which seemed odd to me and to her) but thought you creative people may have a tried and true recipe for her special day.

sure do! this is a really good vegan white cake recipe that i've used a lot of times with great success. it doesn't specify, but i always use imitation vanilla in it. and if she can have imitation almond, then use that or just replace the almond with more vanillla. its important to bake quickly after mixing, as the vinegar and baking soda are an important leavening agent.

TITLE:   White Cake            

INGREDIENTS:
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/4 tsp salt
1 cup water
1/3 cup oil
1 Tbsp mild vinegar
1 Tbsp clear vanilla
1/4 tsp almond extract




METHODS:
Sift together dry ingredients. Mix together wet ingredients and add to the dry. Pour into greased and floured 8x8 pan. Bake 350 for 35 minutes or until done.

Thanks! Now she is contemplating carrot cake too? Does anyone have a good recipe for that as well?

i actually do! it doesn't even call for butter or milk in the first place. it does call for nuts, but obviously you can leave those out. i would replace them with crushed pineapple, as i hear thats really good in carrot cake. i haven't made this recipe, but its WBH. every recipe of theirs that i've tried has turned out REALLY, REALLY good! so im sure this one will be yummy too. its a large image file, and its too big to attach here in the forum. so pm me with your email address (or just email me) and i will send it back to you that way.
