I tried the recipe in Colette's Wedding Cakes book, and so far I'm really happy with the way it turned out. It's still resting, but I'm going to try using it maybe later today. I have heard that homemade fondant is not as elastic, so we'll see what happens...

My question is--This is going to be for a dummy cake, and it seems like I've read some of you who have done fondant dummies without BC under the fondant. Does that work as well, or do I *have* to undercoat the foam rounds with bc first? It's for a cake for our fair.

You can use water.....just run the dummy under the faucet and then put on your fondant.....IT WORKS and you don't have to worry about smooth buttercream.

I cover mine with seran wrap and then buttercream and then fondant that way when you are done just take off the plastic wrap and you don't have to clean anything up.
