How far ahead can I make BC roses to go on a wedding cake? and how do I store them to keep them from getting condensation on them? if I refrigerate them will they condentate after I take them out? Or just keep them on the counter in a container?
Actaully you can freeze buttercream roses. I've frozen them up to 3 weeks time. I make my roses using a flower nail and a piece of waxed paper. I then pipe the rose onto that so I'm able to place them in a freezer safe piece of tupperware and then freeze them. This way you can grab one rose at a time if you need to. They are really easy to handle once frozen (though you do have to work quickly when placing them on the finished cake because the heat from your hands starts to melt them kind of quickly). You don't have to run
from the freezer to the cake
but it's better if you only grab a couple at a time. Once placed on the cake - don't touch them - they will thaw fine - I've never had damage from the condensation as long as they are left alone once placed. I hope that helps. If your not sure about the thawing - pipe 1 rose - stick it in a container, stick it in the freezer, after frozen - take it out to see how quickly, or how much time you have to handle it before it starts to melt. I love this method cause I'm the one who always had trouble getting the rose from the flower nail to the cake - it was way too hard to handle with those scissor things
