Hi - thanks again to those of you who helped me with my question about freezing decorated cakes (my upcoming wedding cake). Now my question is, if my main frosting is white and my roses are red with green leaves, will I have to worry about the colours "bleeding" onto the white when it thaws?

Can you freeze your roses and leaves separately, then add them (still frozen) to the cake when that has thawed and condensation has evaporated - then let them thaw? Might be a safer bet!
You can also put a small bed of piping gel down where you plan to place the flower. It works as a buffer between the colored icing and the white icing.

Be sure to completely uncover you cake before you let it thaw. If it sits with plastic wrap on it the colors will definitely bleed as the cake sweats during the thawing process.
thank you all for your replies and advise....freezing the roses and leaves separately makes sense to me as well as using the piping gel as a buffer, but I'm now considering making all my roses white (eliminating the possibiliy of bleeding) and adding the "red" to my cakes by way of adding a nice ribbon trim for colour............I know, I'm a chicken
I'm just soo pressed for time on the day of my wedding that I don't think I'll have the time or sanity to decorate it after everything thaws.........
