Freezing Cake/frosting

I've been trying to find time to practice more decorating but just havn't found the time.

I've read on here that some of you freeze your cakes and/or icing til needed.

What's the longest you can leave a cake frozen? What's the longest you can leave frosting frozen?

How much time in advance do you usually take the cake/icing out of the freezer to thaw?

Sorry for all the questions but baking, making frosting and decorating all in one day just leave me sore and miserable...though I usually have a good looking cake afterward icon_wink.gif

What's the longest you can leave frosting frozen? months

How much time in advance do you usually take the cake/icing out of the freezer to thaw? The day before to the fridge then the counter the day of.

I had a finished cake that lived in the freezer a month - still wonderful when we ate it!

I have not frozen cakes yet so can't help there but I have frozen buttercream frosting and it lasts for weeks though I must add that it's just the small quantities of different colours that are frozen for more than a month but they still taste really good.

Normally I take out my frosting about 2-3 hours before decorating but that's on a hot day. In winter usually about 6 hours before.

So I've been throwing away my colored icing all this time for nothing? icon_cry.gif

Just make sure to whip the icing up again to get the correct consistency back. Also, make sure to wrap you cakes very well so they do not get freezer burn! IMO, a slightly frozen or very cold cake is easier to frost.
