I just made my first fondant cake tonight - how do I store it? If I want to serve it tomorrow, do I just leave it out? If I want to serve it in several days, is it best to freeze it? Thanks!!!

I store my fondant covered cakes in an air-tight container, or a cake box.

I have never refrigerated them as I read that they sweat, but don't know from first hand experience. I don't know how well they freeze, maybe somebody else can help you with these 2 questions.

Fondant cakes can be left out for a couple of days with no problem. Make sure though you do not have a filling in it that needs refrigeration. Fondant does sweat. The BC on your first icing seal in the moisture of the cake, so that when you put the fondant on it it covers and protects the cake. I have frozen fondant, wrapped real well and then thawed in the refrigerater still wrapped well until it was completely thawed. I was then able to put out to room temp and roll as usual.

Thanks for the responses! I don't have a lot of room in my freezer right now, so it helps immensely to know I can leave it out for a couple of days.
