I just baked some nfsc with lemon extract and omg it's really really good!
I had an extra cookie with no mmf (since I cut out all the mmf shapes beforehand...miscounted, I guess
) so I ate it! It's 12am! LOL Anyway, I made lemon mmf, too. The cookie is very lightly lemon, which is perfect!

This is so perfect!... I have been craving lemon. And I just bought a lemon shaped cookie cutter today! How much lemon extract did you use? Did you sub completely for the 2 tsp. vanilla extract? I've never made MMF -- but it's at the top of my list to try. Your cookies sound yummy!
I subbed 1 for 1, so 2 tsp. lemon extract. So yummy! It's all the buttery goodness you love about nfsc, with a hint of lemon. You really notice it at first, but as you eat the cookie, I guess you get used to it. I bet a bit of lemon zest would make it even better, but I didn't have any lemons! LOL
I've made NFSC with the lemon extract and it is yummy.
Another good flavor that I recently tried is strawberries and cream using the Capella Coffee flavor drops along with some vanilla. YUM! YUM! My new favorite (so far!). I have 6 more flavors to try in the NFSC dough.

I also use lemon in my NFSC and I agree they are quite yummy...much better, in my opinion, than just vanilla. I, however, still add the vanilla along with the lemon. So good!!
Lemon is also good in royal icing. I prefer the taste of BC on cookies, but I can't get BC to look good and RBC (also so yummy) is not convenient when just don't a small amount of cookies that need to be different colors. So, I decided to try lemon in my royal (just subbed it for some of the water) as I had read about on CC and it really made the taste of the royal so much better!
Lemon in the cookie, lemon in the icing...it's so good!!
