How was wondering how all you cake decoraters out there get those perfect clean crisp edges? What techniques do you use?

I have been decorating for about 5 years now. I used to smooth my cakes out with wax paper, but recently I have been using VIVA paper towels. I love the results. My cakes have never looked more professional than they do now. I get the good clean edges now. Hope this works for you.

Thanks queencake40, but I do use the Viva towel method too, my icing is smooth, looks just like fondant, its the top edges of the cake that I want to look crisp. I would like the rounds to look nice and round and have a crisp edge on them.

I've seen the tutorial on here for the upside down frosting method, and maybe that is what they use, I haven't tried that method yet. It looks too complicated. I want the simple techinque. icon_biggrin.gif

Anyone else have anymore thoughts. I've seen those beautiful edges on your cakes.

I use a bench/dough scraper to get my clean edges. I ice the cake as smooth as I can with an offset spatula, then use the bench/dough scraper. It helps to frequently run the scraper under hot water - this seems to be the trick. Hope this helps!

I use the hot spatula method some and I have been trying the viva but on the tops it makes them rounded over and I too would like them to be sharp edges. Does it make a difference how thick or thin your icing is?

I have tried the upside down method once and did not have great results, but I think it is definately something that would work if you practice practice practice, but I guess that goes hand in hand with decroating in general. It all takes a whole lot of practice.

i used a viva paper towel to get a nice crisp edge by laying the towel so it covered the top and side then sorta pinched and smoothed...then of course like an idiot I iced on a border. lol, not one of my better moments. I was so proud of my crisp edge, picked up my bag of icing and piped away, i was halfway through before I even realized what i'd done...i was very tired.
