What's With Marzipan??

I have never used marzipan and was wondering if you can cover an entire cake with it, the same way you do fondant. Any hints would be helpful as a friend mentioned a cake with marzipan and I think she meant covering the cake. I am totally clueless.

Yes, you can cover a cake with Marzipan..but it is usually not the final cover on the cake..
some people put Marzipan under Fondant..Marzipan is expensive, that's one of the reaons why it is not a popular cake cover..it 's totally different from fondant. It is made of ground Almonds, sugar, eggs etc....
it can be eaten as is like candy. It is delicious. It feels like Fondant. And can be colored like Fondant. icon_smile.gif

Is marzipan something that can easily be made or would you buy it premade.

prettycakes is right, it can be pricey. I don't bother making the almond paste from scratch anymore, I just use the Solo brand almond paste. It tastes great, even better than scratch my mom-in-law says... and she was a baker in europe! I use the Emeril Lagasee recipe off of the foodnetworks site. Just cut back on the corn syrup a bit and it will be a huge hit!

Thanks prettycakes and mkolmar. I checked the Emeril recipe and it SEEMS pretty simple. I'll give it a try. It I coat the cake with it, do I still need to layer fondant on the top? Wouldn't it be overkill? What color does the marzipan turn out to be?

i have seen cakes covered with marzipan being the final cover. its usually painted with cocoa butter.

Marzipan usually ends up being a light tan color, but you could add color to it like fondant.

Natural homemade marzipan will be a pale creamy yellow. Bought marzipan is often coloured a strong yellow, but you can buy the natural coloured stuff too (or at least you can in Europe!).

In a recent post (can't remember the name) somebody said that it can be colored white and it should work fine.
Marzipan is mostly used in Europe and they do use it as we use fondant. If you do a search on the gallery, you will find couple of picture, but you can also google it and you'll see more variety.
I did my first intent but it came out sticky so I'm trying Emerill's recipe to se how it comes out. By the way...
Mkolmar where do you get that almond paste??? I've never seen it (never looked for it either icon_biggrin.gif)

No we don't. Most of our cakes are a very rich dark fruit cakes. we tend to cover the cakes with marzipan BEFORE we cover with royal icing or fondant.
It stops the colour from the cake seeping through and staining the icing. It also gives a good smooth base surface on which to start our icing

It is also used for modelling quite a lot. Especially popular are small pieces coloured and shaped like fruit.
