I have never made petits fours, I need to make some for July 22 for a baby shower. I also have to do everything else for the baby shower. I was going to try to make a small batch the other day and I screwed up, so I was going to make cake balls with the cake and decided to make the "balls" into squares, and cover them with the petits fours icing.
So back to the point, can I make these and freeze them this week, and take them out a day before they are needed? Will they come out ok if I do this? and if so how should I freeze them, I have never frozed a cake before. Please any advice?

I'm not positive about how well the cake balls will keep frozen. But I do know that you can make your regular cake now for Petit fours and freeze it and work with it again the week of the shower.

Sometimes when I'm in a pinch for time and the event is not so 'social' I make my petit fours in the mini muffin tins, and only fill no more than 1/2 full of batter. Then after they are cool, I turn them upside down to pour the icing over. I also put the cream filling in a bag with a #3 tip and insert the creme in the cake that way before I ice them. You can make these mini cakes ahead of time and freeze them too. I do put them in layers with wax paper between the layers in tupperware containers.

Hope this helps.

I make all of my cake balls ahead of time and freeze in little balls in ziploc baggies, then take them out as I need them and cover them.

I came across a wonderful silicone pan that is square shape, perfect size for cake balls....I hated the fact that my cake balss were never pretty and round after dipping in chocolate, so now I fill the mold with chocolate, stick my cake ball in (becomes a square shape) and then fill the rest of the way with chocolate. This would also be a great way to make your petit fours. HTH, I don't have my pics loaded yet, but hopefully tomorrow!
