My vote would be for the airbrush....once you learn how to use the airbrush you will find there are SO MANY uses for it! Even on wedding cakes...I love the option of shading BC roses from dark centers to light edges just like fresh flowers, to shading leaves from light to dark. On sheet cakes you can use the brush with hand cut or purchased stencils...torn paper towel to make a cloud...lots of things that don't require the projector. I took an airbrush class years ago [1980 or so...] from Frances Kyper and have used it in more ways than I ever imagined before I bought it!
I vote airbrush.
There are ways to get images on cakes...the piping gel method or FBCT.... but there are times when there is absolutely no substitute for an airbrush! Even if you buy the Wilton sprays or whatever!
I have had cake orders in the past year that I literally would not have been able to do the same quality on, if I did not have an airbrush.
I just got my airbrush............ love it. You can also buy the airbrush pen and get a small compressor from lowes or somewhere like that. Its cheaper that way
what type of airbrush kit did you purchase? are there different types of airbrushing delivery systesms?
how much did you spend on your small compressor?
that sounds like a very reasonable and affordable thing to do.
I am interested in air brushing also for a future purchase. I read that using the walmart hobby ones are not food safe w/the air can.... so are the compressor type ones okay? I have not actually seen any of these up close.

I have a kopy kake air brush and like it a lot. The one I have doesn't have a very large compressor but I have never felt the need for more pressure as too much pressure blows the icing around. The Kopy Kake one is easy to get parts for if you ever need them. I really like the cup kind instead of the ones with a bottle also. I use my airbrush on almost every cake I do.
A Kopy Kake machine would be nice to have but they take up too much space for me. I actually do more figure piping than drawings anyhow.
I have a Badger airbrush that came from A.C. Moore art department. According to the Badger website it is safe for food prep. For a compressor I use an aquarium pump with adjustable air flow. It's not great but I hope to upgrade soon. I just didn't want to sink a lot of money into it until I decided if I liked airbrushing. IMHO, I wouldn't use canned hobby air.
