i am communicating with a sister of the groom ( I will eventually communicate with bride and groom thoug.. this is early stages..)

they want mini cakes blurry photo atached.. i think this might be out of peggy's book. here is the info from the email.

They want live flowers as shown in the book though maybe they are edible and they just can tell ( I told them there could be a concern that the flower would bleed into the fondant. so I dont know about that? )

They do want a taste taste ( I told them to let me know flavors)

they would want one mini cake done so they can see what they would look like


I don't have a problem with a tasting although I do need to set some guidelines. I am strictly word of mouth although I may have a lead on a legal kitchen YAY.

what I may have a problem with is that they want a mini cake (like shown) so they can see what it looks like, they can see what it looks like in the photo LOL.. should I provide this mini cake.. or should I charge for this mini cake or what shoudl I do? HELP!!!!!!!

I would charge. This is what THEY want, not you. You need to get comped for your time and supplies!

That is from Peggy Poschen's book - I just verified from my book icon_smile.gif

From the instructions on the book, those are fresh pink and pale pink roses.

She does them as sheet cakes and cuts the mini cake rounds with a 2" biscuit cutter.

If you're doing another cake before their tasting, and can spare a 2" 2-layer mini cake, I would do one so they see how it looks. Just cover with white fondant and attach a small piece of satin ribbon around the bottom. Ask them to provide the rose and ribbon. If they can't provide the rose and ribbon, I will not do the mini cake as it is very plain just covered with white fondant. There is also a 5-petal royal icing flower in the shade matching the ribbon on top of each mini cake.

I would charge for this mini cake.

I have peggy's book, Im just at work. Thanks for checking for me! I thought that is what she did! thank you for the info so I can answer sooner rather than later

i posted this question awhile ago, and now it appers I may get to do this cake (next year) I am charging for the tasting and applying it to the total of their cake, so now I got another question.. this setup has a cake on top, that is either for them to eat, or them to keep.. Do u charge for the top layer or throw it in?
