I want to make a pineapple 13x9 inch cake torted with pineapple filling. The layer between the cakes will be coconut and the 13x9 inch cake on top will be vanilla torted and filled with lemon. Does the cake on top need cardboard with dowels or will it be okay without? Please instruct me how to do this. Thanks so much!

No, you don't need dowels, it will be fine as is. Also, to help with the handleing of the diffrent layers, I like to use a flat cookie sheet (I use the AirBake sheets I have). What you do is tort the cake and then slowly slide the baking sheet all the way under the top layer. When you are done putting the filling on the bottom layer just slide the cake back off of the sheet and onto the other cake.

No, don't use cardboard or dowels. If you're afraid to pick up the top layer thinking it will break, freeze it for a little while and handle it when it's stiff.
