I am making the cake for my daughter's first birthday. The party is this Saturday and I was going to make as much as I can Thursday and Friday night. Is it ok to make the fondant Thursday night, just as long as i keep it sealed up, with no air getting it? I was going to make the icing and fondant Thursday night and then the bake and cool the cakes Friday and finish decorating them Friday night.
Welcome! Yes, it is fine for you to make the MMF ahead of time. I am making some today and I will use it over the next few weeks for various projects. You are right to keep it sealed up. You will also want to use some Crisco to rub on the MMF before you seal it up.
I am not planning on covering a cake in the near future. I have been making the Easy MMF but today I am trying Rhonda's Ultimate MMF and I might just have to make a small cake to practice using it to cover a cake.

I agree with what everyone has said! I also wanted to bring to your attention that sometimes/usually when the fondant sits the color darkens a bit. Just an FYI! But definitely make it ahead of time!
