Buttercream Icing Too Sweet

I made buttercream icing for the first time last week and it came out really good! The problem is that it is two sweet for my liking...I like the canned icing better (i.e. Duncan Hines, Pillsbury, etc.).

How can I make a good icing that isn't so sweet? I also like whipped and cream cheese icing, but how do I make it? Anyone else use icing other than buttercream?

I've never made royal icing...what is that used for?

do you use just shortening and powdered sugar in your icing? one of the girls in my class found one online....if the recipe calls for 1 cup of shortening, make it a half cup and make the other half cup - butter...unsalted butter...i use it and it tastes way better...

First of all are you putting any salt in your recipe. Salt helps to cut down on the sweetness. Canned icing might taste good to you, but you will have a time trying to make any decorations like roses. It usually is too soft.There are a ton of recipes in this forum, just click on the recipe part.Buttercream is probaby the most popular because it crusts and holds decorations well. There are several different types of BC which you will find in the recipes. Royal Icing is make with meringue powder is drys very fast and becomes very hard. It is not normally used to ice a regular cake. Usually people will ice their dummy cakes with it or make flowers ahead of time so they can cascade down the side. The Wilton book will show you what you can do with it.

The teacher that I had in my Wilton courses recommended that we use a small amount of popcorn salt in our buttercream recipe. The popcorn salt is not as coarse as table salt .Put the salt in your liquid(water,milk or whatever you use)to disolve it before you add it to your other ingredients..It makes a big difference

Try the Whipped Cream Butter Cream frosting on this site.....its is delicious and not very sweet.

Hello tamifaye

Try making an Italian meringue buttercream.
it is creamy, smooth, rich & does not taste as sweet as 'American' buttercream.
It is more complicated to make & more time consuming, but I believe it is well worth the extra effort.

I too had the same problem. Try adding a dash of popcorn salt, popcorn salt is a finer grain of salt and won't leave speckles in your icing. Best of luck to you thumbs_up.gif
