1.IS IT POSSIBLE TO ACHIEVE BRIGHT COLORS IN FONDANT/GUMPASTE?
2.DO YOU HAVE TO ADD A LOT IN RI AND BUTTERCREAM TO GET BRIGHT OR DARK COLORS?
3.WHAT ARE YOUR FAVORITE COLOR BRANDS?

i ALWAYS HAVE ISSUES WITH ACHIEVING THE COLORS i HAVE IN MY HEAD THAT I WANT TO GET. iT FEELS LIKE I ADD AND ADD AND ADD COLOR AND IT STAYS THE SAME, SOME PALE OR OFF VERSION OF WHAT I WANT.

...OH ONE MORE QUESTION...IS THERE A TRICK TO MIXING SOME COLORS TO ACHIEVE CERTAIN SHADES, LIKE A HOT PINK, FOR EXAMPLE?

Yes! You can achieve dark colours by purchasing concentrated paste or powder colours. I've read others' posts about Americolour being their favourite (not available here is Aus!) If you buy powder, it usually takes a while for the colour to dissolve completely into the icing, so mix it and leave for a while (even overnight) and the colour will deepen. With a paste you pretty much get an accurate colour straight away. Not sure about the hot pink, as I've never tried to make that colour....perhaps someone else can help!

I have found that the Americolor brand gives the best reds and blacks, for sure. I tried the Super Red and the Super Black and I would never go back to Wilton for those. One trick for black is to start with chocolate icing, then you don't need to add as much colouring. For other colours, the Wilton paste/gel colours work beautifully for me. You can order the Americolor gels from the shop here at CC. Great service!

I've accidentally gotten a hot pink by adding a bit too much of the Wilton rose pink - that stuff is very powerful! You can get very bright colours in both fondant and BC and royal icings using paste and gel colours. Just keep adding a bit at a time, and remember that most colours will deepen upon standing, so you can add your colour and let the icing sit for a bit, to see how dark it has become.

The colours I use most often are: (Wilton) Rose, Pink, Violet, Peach, Delphinium Blue, Buttercup Yellow, and Juniper Green. (Americolor) Super Red and Super Black, "Electric" colours, and Egg yellow. You can see the colours in the fondant in my son's Fish Cake (most of these are the "electric" colours) and the Super Red in my other son's Bertie Bott's cake:

I have the Americolors. I like them, but I have to add a lot. Does that sound right? (Especially when you have a large quantity)
I have used only one Wilton and I think it was ok. The powder colors I have used for RI and they're ok too but only for tiny amounts..

It's just I had to add a big glob of another gel paste color to get a hot pink and a kind of ripe papaya clor.

The fish are the Americolor electric colors?
The colors on both cakes are awesome!

Do you use fondant you purchase or make or Marshmallow fondant?

Yes, the fish is done using the electric colours - and the red is the super red. In this case, I used purchased fondant - McCalls vanilla and white chocolate fondant. It tastes very good, but I found it very soft, especially the vanilla. They have a chocolate fondant, also, which tastes like Tootsie Rolls!

I've used MMF as well, but for some reason this time I made it I wound up with a big dry mess. I prefer the taste of the McCalls fondant, though, especially the white chocolate. It's really yummy! I don't know if it's available in the US, but I've heard good things about Satin Ice and ChocoPan. I'd love to try some, but I'm sure the shipping to Canada would be exorbitant. I got the McCalls fondant from Golda's Kitchen in Toronto, at www.goldaskitchen.com.
