Question About Royal Icing

Does everything have to be grease free when making royal icing. If so why does all the utensils you use have to be grease free?

Any grease on the bowls or utensils causes the icing to break down and will not mix or harden properly.

hi...your royal icing will break down if its in contact with the grease. i think it will just get soft and not harden. anyone correct me if im wrong please. icon_smile.gif

Ditto to what they said....I usually clean my utensils (bowls, paddle, ect) with hot water. Then soak them with hotwater and vinegar - then final rinse it with hot water.

Honestly I have never gone to any extra lengths to make my utensils grease free. I wash everything in the dishwasher, and then just use it from there. So far so good.

Its kind of like making meringue for a pie. If your bowl or utensils are greasy it will cause your meringue to flop on your pie.
