that is according to the cake mix doctor book..there was a paragraph there about Kay Emel-Powell of betty crocker saying that it does not have to be baked right away..accordingly, you can mix your ingredients early in the day, cover it, put it in the refrigerator and bake it when u get home..the author tested it with a chocolote cake recipe..she mixed it saturday morning and baked it at 8 pm..according to her, no change in taste and texture...for those without the cake mix doctor book, hope this helps...

Thank you soooo much. I have wondered about this on a number of occassions when baking. Epecially when I need 1 1/2 mixes for one layer, and I only have one pan in that size, but need to make a double layer cake!

I have always put my extra in the frig and it works fine, As with cookies a chilled dough seems to work well.

Does this refer to cake mixes? Will it work with batter made from scratch?

This has been a burning question of mine. Thank you! Thank you! Thank you! I was thinking that the baking powder would activate when the moisture was added and waiting would inhibit the "poof" when the heat hit it. Thanks for the great info.
