Am doing my first three tier wedding cake. Do decorator plates take the place of wooden dowels? I know that you are supposed to insert a long dowel through all three cakes, but this would not be possible if there was a plastic plate in between. Thanks in advance.

You will still use dowel rods or push in/hidden pillars when you use separator plates. Here are links to Wilton instructions:
